YIELD: 6 BEEF ENCHILADA
COOKING TEMP: 350F PORTION: ONE ENCHILADA
COOKING TIME: 1/2 HR COOKING PAN: BAKING PAN
INGREDIENTS AMOUNTS PROCEDURES
| Beef ground lean : 12 oz 1. Cook beef and onions until onion is
| Onions chopped : 1/2 cp tender and beef is crumbly.
| Salsa : 1/2 cp 2. Add salsa, chilies, tomato juice,
| Green chilies diced : 1/2 cp garlic powder, cumin and salt to
| Tomato juice : 1/2 cp meat. Simmer 20 min. stirring
| Garlic powder : 1/2 ts frequently.
| Cumin : 1/2 ts 3. Fry tortillas in oil to soften. Dip
| Salt : 1/2 ts into enchilada sauce. Place 1/3 cup
| Tortilla corn : 6 meat mixture on tortilla and spread
| Oil : 1 Tb across middle of tortilla; roll up
| Enchilada sauce : 1 1/2 cp tight.
| Cheese jack shredded : 1/2 cp 4. Place seam down in baking pan.
|. Cover with enchilada sauce. Bake
until hot and bubbly.
5. Sprinkle with shredded cheese and
return to oven until melted.
